About our Premixes

Premixes have been developed for the production of specific baked products.

Each of our Premixes utilise a specific base flour milled from specially selected and grown wheat varieties, to which has been added all other required ingredients to enable the easy production of the targeted end product by the intended process.

Laucke specialist Premixes are named after the type of end product that the premix is designed to produce.

Be aware that we produce two quite distinctly different ranges of Bread Premixes; each with unique characteristics, and suited to the requirements of quite different production equipment and methods.

To assist the reseller to provide the most appropriate Bread Premix for home Bread Makers, Laucke strongly recommends the sale of our Retail Pack Premix range to home bakers.

These products are clearly labelled as “Bread Machine Premixes“ and are designed and produced specifically for home baking, either using a machine or by hand.

600 g; 3 kg and 5 kg Retail Pack Premixes are packed in paper bags, and 10 kg and 25 kg are packed in calico bags. Appropriate Instructions are provided with each pack. The instructions are printed on the paper bags, and are contained within the calico bags.

Our Manufacturing Range of Bread Premixes is designed specifically for use in commercial bakeries with their vastly different processing equipment, and as such are less than suitable to the unique demands of home baking, and Bread Machines in particular. This Manufacturing range is typically available in 25 kg white paper packs. The same End Product names, such as “Crusty White“, are often used in each range.

Instructions, where provided on these paper bags, are specific to the procedures and equipment of commercial bakeries. These Manufacturing Instructions must not be followed when a bread machine is used, although they may be used as a guide in home baking where dough is prepared by hand or with a dough hook machine.

We do not recommend the use of a Manufacturing Premix for home baking purposes where a Retail Pack Premix of the same name is produced by us.

Bread Machine Premix instruction sheets should not be provided to purchasers of this Manufacturing range, as this action infers that we recommend the use of the Manufacturing Premixes in Bread Machines.

Laucke are not able to effectively support a home baker in the event of quality problems occurring when products from our Manufacturing range of Bread Premixes are used, as all instructions and problem solving procedures are developed for the characteristics of the Retail Pack Premixes.
