There are so many interesting features about Laucke Flour Mills and the way we mill flour.
One of the more unusual ones is the "shaker box" box below, that sifts flour to correct particulate sizes.

Our company emphasizes its desire to identify with Australia's unique marsupials (many of which live in close proximity to our flour mill) by giving the marsupials names to some of our flours. You will see that the qualities of these flours are reflected in the nature and abilities of the marsupials they take their names from. Our founder Friedrich Laucke always remarked how interesting and special the marsupial animals of Australia were and our company wants to reflect that connection by milling flour that achieves a real difference to the product it eventually makes. A difference other flours do not achieve. Our emphasis on the best raw materials results in the best flours. The uniqueness of our specialty flours largely comes from the careful selection on individual grain varieties. Each variety has its own characteristics that give flavour, colour, health and nutrition properties and it's own suitability towards particular end products. Laucke consults with farmers to source grain for its special requirements. Some farming families have been supplying us for generations and we know their farming and land maintenance practices well. It is reassuring to some of our customers who support responsible and sustainable agriculture that Laucke supports Certified Organic Farmers and is a Certified Organic Processor as well.
