Laucke Big Top Muffin Premix
For superb muffins you cannot go past this product. Within 45 minutes from opening the bag you can have very attractive scrumptious muffins marching out the door. This pre-mix makes it very easy for anybody to produce sweet muffins with
or without a mixer.
Muffins traditionally have any fruits or nuts etc; placed on top after they have been deposited. However, mixing flavours or colours through the batter will not detract from the finished product.
Ingredients
Unbleached Wheaten Flour, Sugar, Vegetable Oil, Milk Solids, Raising Agent (339, 341, 450, 500), Salt, Vanilla Powder.

Method
-
Water - Any flavourings and/or colourings can be
added but extra water may be required especially if adding cocoa.
- Whole
Egg - This is optional but recommended. If omitted, the water will need to
be increased accordingly.
- Place
all ingredients in bowl and mix until clear. If using a machine with a
beater, 1 minute on slow and 2 minutes on medium will be adequate. Extended
beating will make a smoother more even textured muffin.
Hints
- Maintain a batter
temperature between 21°C
and 25°C
for best results.
- Although these mixes are
designed for muffin pans large cake tins can also be filled to make
products like apple cake. Just half fill a sponge tin and sprinkle diced
apple, cinnamon and sugar to make an apple and cinnamon cake.
- When
depositing into solid tins or muffin pans you can get an excellent release
and altered external appearance by dusting the greased or oiled pans with
flour and shaking the excess out.
- With
jam or fruit fillings you can place a lump or portion on the top of the
muffin prior to baking which will sink and make a nice tasty centre.
- When
mixing flavourings through the batter it can be interesting to “just” mix in
rather than mix thoroughly. This will create a marbled effect.
- When
finishing use some flare and pipe fresh cream and add some of the product
used in the centre to identify the flavouring used. Simple dusting with
icing sugar can also be effective. Flaked Chocolate and icing sugar
also looks good on Chocolate muffins.
Baking
Due to the
variety of ovens it is impossible to state an exact baking time but for a normal
sized muffin 20 to 25 minutes at 180°C
to 200ºC can be used as a guide.
