Scone Recipe
4 cups Laucke Scone Mix (level - not heaped)
1½ cups Water
- Mix the scone mix to a light, soft dough with the water. The dough will collect together. Continued mixing should result in the dough becoming smooth, with a creamy appearance.
- Turn onto a lightly floured board and knead lightly. Allow the dough to sit for 5mins.
- Pat out to approx. 30cm thickness, and cut into shape.
- Place on a floured tray.
- Knead the remaining dough lightly for a second time, press out and cut as above.
Bake between 200o and 210o C for approx. 10mins.
1kg scone mix should make 22 scones.
For the sultana scones, use ½ sup sultanas (100g) to 1kg scone mix and proceed as above.
The mixture is better to be on the slightly wetter side rather than drier as if necessary you can always add a little more of the scone mix.
