Banana Cake, Carrot Cake Topping Recipe
Ingredients
Unsalted Butter 2 kg
Neuchatel or Philadelphia Cheese 4 kg
Icing Sugar 3 kg
Melt Butter (DO NOT BOIL) or bring to room temperature.
Add all ingredients into a bowl and mix with a paddle until a smooth paste is formed. Scrape down bowl 3-4 times
Storage and Handling
It is important that this topping is kept under 5 C° at all times other than when it is being handled.
To bring the topping to a useable consistency for spreading, either method below can be used:
- Low heat applied to a stainless steel bowl.
- Heat in a Microwave oven.
Both methods require constant mixing as the topping burns easily, and is unusable if over heated.
