Loaf always low in volume
Assuming that the appropriate dough weight relative to the mixing bowl size is being used, and that a dough of the correct consistency has been achieved, it must then be recognised that small loaves occur because some machines do not have properly effective 'kneading' and 'rising' cycles. Because of this, either more yeast or more dough weight (Premix and water) than indicated by our Recipe may be required to give the desired loaf volume. When adding more Premix, also adjust the amount of water.
Loaves low in volume may also be caused by variation in the weather.
