Almond Macaroons

| 480 g | Marzipan | 2⅛ cups |
| 480 g | Caster Sugar | 2¼ cups |
| 60 g | Ground Rice | ⅜ cup |
| 150 g | Egg Whites (variable) | ½ cup |
| 4g | Bicarbonate of Soda | 1 tsp |
| 20 ml | Water | 1 tbsp |
Method
Preheat oven to 170°C.
Break down the Marzipan with the Egg Whites.
Add the Sugar and ground Rice.
Dissolve the Soda in the Hot Water.
Mix together until smooth.
Allow to stand for a little while before piping out.
Pipe onto wafer paper, dust lightly with granulated sugar.
Bake immediately at 170°C, until lightly browned (approximately 10 - 12 minutes).
If Marzipan is not available use 240 g of Ground Almonds in place of Marzipan, and increase Sugar to 720 g.
