Almond Macaroons

480 g Marzipan 2.1 cups
480 g Caster Sugar 2-1/4 cups
60 g Ground Rice 1/2 cup
150 g Egg Whites (variable) 1/2 cup
4.6 g Bicarbonate of Soda 1 tsp
20 ml Water 1 tbsp

Method

  1. Preheat oven to 170°C.

  2. Break down the Marzipan with the Egg Whites.

  3. Add the Sugar and ground Rice.

  4. Dissolve the Soda in the Hot Water.

  5. Mix together until smooth.

  6. Allow to stand for a little while before piping out.

  7. Pipe onto wafer paper, dust lightly with granulated sugar.

  8. Bake immediately at 170°C, until lightly browned (approximately 10 - 12 minutes).

  9. If Marzipan is not available use 240 g of Ground Almonds in place of Marzipan, and increase Sugar to 720 g.
