Apricot Muesli Bar

135g Dried Apricots, chopped 0.5 cup
125g Water 0.5 cup
150g Butter, chopped 0.6 cup
150g Brown Sugar 0.6 cup
160g Kangaroo Classic Flour 0.3 packet
2g Sodium Bicarbonate 0.4 tsp
100g Rolled Oats 1.1 cup
210g White Chocolate Bits 1.1 cup

Method

  1. Place Apricots and water into pan and bring to boil until nearly all water has been driven off and remove from heat.
  2. Add the butter to the apricots and stir until melted.
  3. Stir in the brown sugar and allow mixture to cool.
  4. Sift the flour and Bicarb and stir into cooled mixture.
  5. Add oats and chocolate and stir into mixture.
  6. Line a 30cm x 25cm 4 sided pan with baking paper. Press the mixture into the pan.
  7. Place into oven preheated to 180°C for about 35 minutes or until golden brown.
  8. Stand 10 minutes and turn out onto a board for cutting
  9. Cut into 4cm x 8cm fingers or 5cm squares and enjoy.
