Apricot Muesli Bar

| 135 g | Dried Apricots, chopped | ½ cup |
| 125 g | Water | ½ cup |
| 150 g | Butter, chopped | ⅝ cup |
| 150 g | Brown Sugar | ⅝ cup |
| 160 g | Laucke Wallaby Flour | 1 cup |
| 2 g | Sodium Bicarbonate | ⅜ tsp |
| 100 g | Rolled Oats | 1⅛ cup |
| 210 g | White Chocolate Bits | 1⅛ cup |
Method
Preheat oven to 180°C.
Place apricots and water into pan, and bring to boil, until nearly all the water has been driven off, and remove from heat.
Add the butter to the apricots, and stir until melted.
Stir in the brown sugar, and allow mixture to cool.
Sift the flour and bicarbonate, and stir into cooled mixture.
Add oats and chocolate, and stir into mixture.
Line a 30 cm x 25 cm 4 sided pan with baking paper. Press the mixture into the pan.
Place into oven preheated to 180°C for about 35 minutes, or until golden brown.
Stand 10 minutes, and turn out onto a board for cutting.
Cut into 4 cm x 8 cm fingers, or 5 cm squares and enjoy.
Helpful Hints
- The dried apricots and a portion of the rolled oats in this recipe can be replaced by dried fruit and/or nuts, seeds etc. of your preference.
