Banana Bread

250g Margarine or Butter 1-1/8 cups
300g Sugar (brown or white) 1-1/3 cups
120g Bananas, large (riper the better) 2 each
10g Mixed Spice 2 tsp
440g Kangaroo Rising Flour 3-5/8 cups
25g Milk Powder (optional) 3 tbsp
125g Water or Milk 1/2 cup
100g Eggs (50g) 2 each

Method

  1. Add Margarine or butter, Sugar, Bananas and Mixed Spice to a mixer and beat on medium speed for 2 minutes, and scrape the bowl.
  2. Add Flour, Milk Powder (optional), Water or Milk and Eggs to the Banana mixture and mix on slow speed until well mixed.
  3. Place into two 30cm round tins or one 40cm square tin and bake at 180°C for about 35 minutes or until a skewer is pushed into the centre comes out clean.
