Banana Bread

| 250 g | Margarine or Butter | 1⅛ cups |
| 300 g | Sugar (brown or white) | 1⅓ cups |
| 120 g | Bananas, large (riper the better) | 2 each |
| 10 g | Mixed Spice | 2 tsp |
| 440g | Laucke Wallaby Flour | 2¾ cups |
| 30 g | Baking Powder | 2 tbsp |
| 25 g | Milk Powder (optional) | 3 tbsp |
| 125 g | Water or Milk | ½ cup |
| 100 g | Eggs (50g) | 2 each |
Method
Preheat oven to 180°C.
Add Margarine or butter, Sugar, Bananas and Mixed Spice to a mixer, and beat on medium speed for 2 minutes, and scrape the bowl.
Separately combine the baking powder to the flour and sift several times.
Add Flour/Baking Powder, Milk Powder (optional), Water or Milk and Eggs to the Banana mixture, and mix on slow speed until well mixed.
Place into two 30 cm round tins or one 40 cm square tin and bake at 180°C for about 35 minutes or until a skewer is pushed into the centre comes out clean.
