Banana Bread

250 g Margarine or Butter 1-1/8 cups
300 g Sugar (brown or white) 1-1/3 cups
120 g Bananas, large (riper the better) 2 each
10 g Mixed Spice 2 tsp
440g Kangaroo Rising Flour 3-5/8 cups
25 g Milk Powder (optional) 3 tbsp
125g Water or Milk 1/2 cup
100 g Eggs (50g) 2 each

Method

  1. Preheat oven to 180°C.

  2. Add Margarine or butter, Sugar, Bananas and Mixed Spice to a mixer, and beat on medium speed for 2 minutes, and scrape the bowl.

  3. Add Flour, Milk Powder (optional), Water or Milk and Eggs to the Banana mixture, and mix on slow speed until well mixed.

  4. Place into two 30 cm round tins or one 40 cm square tin and bake at 180°C for about 35 minutes or until a skewer is pushed into the centre comes out clean.

  • Yield: 2 x 30 cm round, or 1 x 40 cm square
  • Bake for 35 minutes
