Banana Oatmeal Biscuits

240 g | Laucke Wallaby Flour | 1½ cups |
225 g | Sugar | 1 cup |
250 g | Mashed Bananas | 2–3 med. bananas |
165 g | Shortening | ¾ cup |
50 g | Egg | 1 |
5 g | Salt | ⅞ tsp |
3 g | Cinnamon (ground) | 1 tsp |
4 g | Bicarbonate of Soda | ⅝ tsp |
1g | Nutmeg (ground) | ¼ tsp |
80 g | Chopped nuts or sultanas | ⅝ cups |
Method
Preheat Oven to 200°C.
Combine all ingredients in a mixing bowl.
Drop rounded teaspoons about 5 cm apart onto prepared baking trays.
Baking time approx 12 minutes or until a light brown colour.
Yield approximately 50 at 20 grams each.
Variation: Substitute chocolate chips for the chopped nuts or sultanas.
