Banana Oatmeal Biscuits

165 g Rolled Oats 1⅞ cups
240 g Laucke Wallaby Flour 1½ cups
225 g Sugar 1 cup
250 g Mashed Bananas 2–3 med. bananas
165 g Shortening ¾ cup
50 g Egg 1
5 g Salt ⅞ tsp
3 g Cinnamon (ground) 1 tsp
4 g Bicarbonate of Soda ⅝ tsp
1g Nutmeg (ground) ¼ tsp
80 g Chopped nuts or sultanas ⅝ cups

Method

  1. Preheat Oven to 200°C.

  2. Combine all ingredients in a mixing bowl.

  3. Drop rounded teaspoons about 5 cm apart onto prepared baking trays.

  4. Baking time approx 12 minutes or until a light brown colour.

  5. Yield approximately 50 at 20 grams each.

  6. Variation:  Substitute chocolate chips for the chopped nuts or sultanas.
