Bushman's Bread (Damper)

500 g Laucke Wallaby Bakers Flour 3⅛ cups
20 g Baking Powder 1½ tbsp
10 g Milk Powder 2⅓ tbsp
5 g Salt ½ tsp
15 g Canola Oil 3 tsp
310 g Water 1¼ cups

Method

  1. Preheat oven to 210°C.

  2. Combine both oil and water.

  3. Sift and mix all dry ingredients together.

  4. Add oil and water, and knead into dough until smooth.

  5. Leave the dough piece whole, or cut into smaller pieces and mould.

  6. Dust with flour then bake in an 210°C (Conventional Oven) for approximately 20 minutes (for whole dough size, smaller pieces use less time).

Helpful Hints

  • Other ingredients can be added to your damper to create your favourite culinary delights.
  • Savoury – cheese, bacon, herbs, peppers
  • Sweet – fruit, cinnamon, sugar
