1,000 g Laucke Atta Flour 6¼ cups
650 - 680 g Water 2.⅝ - 2¾ cups
100 g Shortening ⅜ cup

Method

  1. Add water to the Atta flour and shortening.

  2. Mix until smooth.

  3. Weigh dough pieces at 70 grams.

  4. Shape dough pieces, and give 30 minutes rest time.

  5. Roll out dough pieces with rolling pin into thin pancakes.

  6. Fry the rolled out dough pieces on hot plate for approximately 1 minute on each side.

  7. Ideal served with curries.
