Chewy Chocolate Cookies

300 g | Icing Sugar | 2¼ cups |
115 g | Cocoa Powder | 1⅓ cups |
20 g | Laucke Wallaby Flour | 1½ tbsp |
1 g | Instant Coffee Powder | 1 tsp |
15 g | Water | 3 tsp |
115 g | Walnuts (Finely Chopped) | ⅞ cup |
Method
Preheat oven to 180°C.
Whisk the egg whites until frothy.
Sift the cocoa powder, flour and coffee into the egg whites.
Add the water, and continue whisking on low speed to blend, then on high speed for a few minutes until the mixture thickens. Fold in the walnuts.
Place tablespoons of the mixture onto prepared baking trays, allowing room for spreading.
Baking time 12 to 15 minutes until firm and cracked on top surface, but soft on the inside.
Transfer with a metal spatula to a wire rack to cool.
Yield approximately 25.
Helpful Hints
- Variation: Add 75 grams of chocolate chips to the dough with the walnuts.
