Chewy Ginger Banana Cookies

2 g | Grated lemon Rind | 1 tsp |
200 g | Brown Sugar firmly packed | ⅞ cup |
1 each | Egg Yolk | 1 each |
200 g | Mashed Ripe Banana | ⅞ cup |
60 g | Chopped Walnuts | ½ cup |
300 g | Laucke Wallaby Flour | 1⅞ cups |
6 g | Ground Ginger | 1 tbsp |
2 g | Bicarbonate of Soda | ½ tsp |
Method
Preheat oven to 180°C.
Beat the butter, lemon rind, sugar and egg yolks together in a machine mixing bowl until smooth.
Stir in the remaining ingredients.
Drop rounded teaspoons of the mixture about 5 cm apart onto a prepared baking tray.
Baking time 12 minutes or until firm.
Stand biscuits for 5 minutes before lifting onto cooling wires.
Yield approximately 65.
