Chocolate Bread Men

1 kg Laucke Wallaby Baker’s Flour 6¼ cups
420 g Butter 1⅞ cups
360 g Sugar 1¾ cups
80 g Egg yolk ⅓ cup
15 g Bicarbonate of Soda 1 tbsp
40 g Cocoa Powder ½ cup
180 g Golden Syrup ½ cup

Method

  1. Preheat your oven to 200°C (Conventional Oven).

  2. Beat the eggs, sugar and butter in a large bowl until creamy.

  3. Add all other ingredients and mix for 10 minutes.

  4. Tip the dough onto a floured bench top and shape into a ball.

  5. Briefly knead the dough, and then let it rest for 10 minutes.

  6. Roll out the dough until it is 5 millimeters thick.

  7. Cut into the desired shapes, place onto a baking tray and bake for 15-20 minutes

  8. Cool on wires, enjoy plain or top your chocolate bread men with your favourite icings and candy decorations.
