Chocolate Chip Peanut Cookies

125 g Butter, chopped ½ cup
10 ml Vanilla Essence 2 tsp
220 g Brown sugar firmly packed 1 cup
55 g Egg 1 each
130 g Crunchy Peanut Butter ½ cup
225 g Laucke Wallaby Flour 1⅜ cups
105 g Unsalted roasted Peanuts, chopped ¾ cup
190 g Chocolate Chips 1 cup

Method

  1. Preheat oven to 180°C.

  2. Beat the butter, essence, sugar, egg and peanut butter in a machine bowl until smooth.

  3. Stir in the flour, peanuts and choc chips.

  4. Roll rounded tablespoons of the mixture into balls and place onto prepared baking trays.

  5. Flatten slightly with a floured fork.

  6. Baking time 15 minutes or until golden brown.

  7. Yield approx 40.
