Chocolate Coconut Bars

250 g Butter 1 cup
225 g Brown Sugar 1 cup
180 g Coconut 1⅞ cups
200 g Laucke Wallaby Flour 1¼ cups
8 g Baking Powder 1¾ tsp
14 g Cocoa Powder 2¾ tbsp
50 g Egg 1 x 50 g
ICING
155 g Icing Sugar 1⅛ cup
9 g Cocoa Powder 1⅛ tbsp
5 g Butter, soft 1 tsp
15 g Milk 1 tbsp

Method

  1. Preheat oven to 190°C.

  2. Melt the butter over low heat, and then stir in the sugar, coconut, flour and cocoa powder.

  3. Add the egg last.

  4. Spread evenly on a prepared baking tray.

  5. Bake at 190°C, for 20 minutes.

  6. Icing

  7. Place butter, icing sugar and cocoa powder, into a mixing bowl and mix together, then add the milk, mix until smooth and spreadable.

  8. Spread the base with the icing, sprinkle with coconut and cut into fingers.
