Chocolate Peanutties

125 g Butter, melted ½ cup
5 g Vanilla Essence 1 tsp
115 g Caster Sugar 6½ tbsp
50 g Egg 1 x 50 g
200 g Laucke Wallaby Flour 1¼ cups
8 g Baking Powder ½ tbsp
18 g Cocoa Powder 3½ tbsp
115 g Unsalted peanuts, chopped ¾ cup
150 g Finely chopped unsalted peanuts, extra ⅞ cups

Method

  1. Preheat oven to 190°C.

  2. Beat the butter, essence, sugar and egg in a mixing bowl until smooth.

  3. Stir in the sifted flour, baking powder and cocoa powder.

  4. Then add the chopped nuts.

  5. Roll 2 level teaspoons of the mixture into a ball and roll in the extra nuts.

  6. Place onto a prepared baking tray and flatten slightly.

  7. Allow approximately 5 cm between biscuits for spreading.

  8. Baking time 15 minutes or until firm.

  9. After baking, lift onto wire racks to cool.

  10. Yield approx 45 at 16 grams each.
