Chocolate Rainbow Slice

250 g Biscuit Crumbs 1⅘ cups
5 g Cocoa Powder 1 tbsp
125 g Butter (melted) ½ cup
400 g Sweetened Condensed Milk 1¼ cup
45 g Coconut ⅖ cup
150 g Unsalted peanuts Roasted (Chopped) 1 cup
250 g Smarties 1⅛ cup

Method

  1. Preheat oven to 180°C.

  2. Prepare a 20 cm x 30 cm lamington pan with baking paper.

  3. Combine the biscuit crumbs, cocoa powder and butter, and press into the base of the pan, refrigerate for 30 minutes.

  4. Combine the remaining ingredients mix well and spread over the base.

  5. Baking time 30 minutes or until lightly browned.

  6. Cool in the pan.

  7. Refrigerate before cutting.
