Chocolate Rolled Oat Cookies

400 g Butter 1⅗ cups
450 g Sugar 2⅙ cups
360 g Brown sugar 1½ cups
200 g Eggs 4 x 50 g
10 g Vanilla Essence ¾ tbsp
640 g Laucke Wallaby Flour 4 cups
10 g Baking Powder 2⅛ tsp
14 g Bicarbonate of Soda 1 tbsp
475 g Rolled Oats 5⅓ cups
5 g Salt ¾ tsp
700 g Chocolate chips 4 cups
240 g Grated Chocolate 1⅓ cup
450 g Chopped nuts (own choice) 3¼ cups

Method

  1. Preheat oven to 190°C.

  2. Cream the butter and both sugars.

  3. Add the eggs and vanilla, mix together with the flour, oatmeal, salt, baking powder and bicarbonate of soda.

  4. Add the chocolate chips, grated chocolate and nuts.

  5. Roll into balls and place onto prepared baking trays about 5 cm apart.

  6. Baking time 10 minutes or until almost no indentation remains when touched.

  7. Yield approximately 110.
