Cinnamon Biscuit

210 g Caster Sugar 1 cup
130 g Vegetable Oil ½ cup
110 g Egg 2 x 55g
350 g Laucke Wallaby Flour 2⅕ cups
6 g Baking Powder 1¼ tsp
6 g Ground Cinnamon 2¼ tsp
1 pinch Salt Pinch
Vanilla Essence to taste

Method

  1. Preheat oven to 200°C.

  2. Beat the sugar and oil together.

  3. Add the egg and vanilla, and continue to beat.

  4. Sieve the flour, cinnamon, baking powder and salt together, then add to the sugar, oil and egg mixture, and continue mixing until a soft dough is formed.

  5. Scale 30 gram pieces and roll into balls.

  6. Dip the tops into sugar and place onto prepared baking trays, allowing room for spreading.

  7. Baking time 12 to 15 minutes until firm and cracked on top surface.

  8. Yield approximately 26 at 30 grams each.
