Citrus Sunflower Biscuits

125 g Butter, chopped ½ cup
4 g Grated Lemon Rind 2 tsp
4 g Grated Orange Rind 2 tsp
165 g Caster Sugar ¾ cup
55 g Egg 1 x 55g
225 g Laucke Wallaby Flour 1⅖ cups
45 g Coconut ½ cup
40 g Sunflower Seed Kernels ¼ cup
Silver Chachous (Dragées)

Method

  1. Preheat oven to 180°C.

  2. Beat the butter, sugar, rinds and egg in a mixing bowl until smooth.

  3. Stir in the flour, coconut and sunflower seeds.

  4. Drop level tablespoons of the mixture about 3 cm apart onto prepared baking trays.

  5. Flatten slightly with a floured fork, and decorate with the silver cachous.

  6. Baking time 20 minutes or until golden brown.

  7. Cool on the trays.

  8. Yield approx 30.
