Coconut Chews

100 g Laucke Wallaby Flour ⅗ cup
10 g Bicarbonate of Soda 2 tsp
50 g Butter or Margarine ⅕ cup
100 g Desiccated Coconut 1 cup
75 g Caster Sugar 6 tbsp
100 g Golden Syrup ¼ cup

Method

  1. Preheat oven to 180°C.

  2. Place the flour and bicarbonate of soda into a mixing bowl.

  3. Rub in the butter or margarine until it resembles fine breadcrumbs.

  4. Stir in the coconut and sugar, then bind to a soft dough with the syrup.

  5. Roll into small balls about the size of a walnut.

  6. Place onto prepared baking trays, allowing room for spreading.

  7. Baking time 12 to 15 minutes or until golden brown.

  8. Allow the biscuits to cool on baking trays for a minute, before transferring them to a wire rack to cool completely.

  9. Yield approximately 20 at 20 grams each.
