Coconut Petit Fours

225 g Coconut 2¼ cup
170 g Caster Sugar ⅘cup
20 g Laucke Wallaby Flour 1½ tbsp
1 g Baking Powder ¼ tsp
55 g Egg 1 x 55 g
60 g Milk ¼ cup
3 g Vanilla Essence ¼ tbsp

Method

  1.  Preheat oven to 180°C.

  2. Place the coconut, sugar, sifted flour and baking powder into a mixing bowl.

  3. Stir in the egg, milk and vanilla essence, and mix together well.

  4. Roll the mixture into balls about the size of a walnut, pressing the mixture together well.

  5. Place onto prepared trays.

  6. Baking time 25 to 30 minutes or until golden brown.

  7. Yield approximately 25 at 25 grams each.
