Coffee Nut Crescents

200 g Laucke Wallaby Flour 1¼ cups
25 g Caster Sugar 2 tbsp
125 g Butter ½ cup
60 g Walnut Pieces ½ cup
1 each Egg Yolk 1 each
6 g Instant Coffee Powder 2 tsp
10 g Hot Water 2 tsp

Method

  1. Place the flour and sugar into a mixing bowl.

  2. Rub in the butter until the mixture resembles bread crumbs.

  3. Grind the walnuts finely in a blender, and add to the mixture.

  4. Add the egg yolk and combined coffee powder and water.

  5. Mix until combined.

  6. Preheat oven to 190°C.

  7. Cover the dough with plastic food wrap, and refrigerate for 30 minutes.

  8. Roll 2 teaspoons of the dough into 5 cm lengths, and then shape into crescents.

  9. Place onto prepared baking trays.

  10. Baking time 12 minutes.

  11. Whilst still warm, gently roll in castor sugar and cool on a wire rack.

  12. Yield approximately 35.
