Cornflake Ginger Chews

90 g Cornflakes, crushed 3 cups
170 g Caster Sugar ½ cup
320 g Laucke Wallaby Flour 2 cups
9 g Ground Ginger 5 tsp
125 g Butter, melted ½ cup
90 g Golden Syrup ¼ cup
62.5 ml Water ¼ cup
4 g Bicarbonate of Soda ¼ tbsp
ICING
30 g Butter 2 tbsp
45 g Golden Syrup 2 tbsp
205 g Icing Sugar 1⅞ cups
20 ml Boiling Water 1 tbsp

Method

  1. Preheat oven to 190°C.

  2. Combine the cornflakes, sugar, flour and ginger in a mixing bowl.

  3. Combine the butter, golden syrup and water in a saucepan, stir over low heat until the butter has melted.

  4. Remove from the heat, and stir in the soda, then quickly add to the cornflake mixture.

  5. Spread into prepared baking trays.

  6. Baking time is 25 minutes or until lightly browned.

  7. Stand for 10 minutes before spreading with the icing cool on the tray and cut when cold.

  9. Combine butter and golden syrup in a saucepan, stir over low heat until butter is melted. Remove from the heat and stir in sifted icing sugar and water, mix until smooth.
