Crisp Coconut Biscuits

125 g Butter ½ cup
225 g Caster Sugar 1 cup
50 g Egg 1 x 50 g
320 g Laucke Wallaby Flour 2 cups
12 g Baking Powder 2½ tsp
Pinch Salt Pinch
90 g Coconut ⅞ cup
Sugar (Extra)

Method

  1. Preheat  oven to 190°C.

  2. Cream the butter and sugar, and beat in the egg.

  3. Add the sifted flour, baking powder, coconut and salt.

  4. Roll into balls, and press flat between the hands.

  5. Dip the top side in the extra sugar.

  6. Place on prepared baking trays, sugar side facing up, allow room for spreading.

  7. Baking time 10 to 15 minutes.

  8. Yield approx 40 at 20 grams each.
