185 g Butter ¾ cup
170 g Caster Sugar ⅘ cup
5 g Vanilla Essence 1 tsp
100 g Egg 2 x 50 g
280 g Laucke Wallaby Flour 1¾ cups
10 g Baking Powder 2 tsp
2 g Bicarbonate of Soda ½ tsp
30 g Milk 2 tbsp
60 g Walnut Pieces ½ cup
125 g Chopped Dates ⅘ cup
60 g Chopped Glace Cherries ⅝ cup
Cornflakes

Method

  1.  Preheat oven to 190°C.

  2. Cream together the butter, vanilla and sugar until light and fluffy.

  3. Add the egg a little at a time, beating well after each addition.

  4. Sift the flour, baking powder and bicarbonate of soda together.

  5. Add one third of the flour to the creamed mixture, and fold in, then add 1 tablespoon of milk; add another third of the flour and the remainder of the milk.

  6. Add the remaining flour and mix well.

  7. Stir in the chopped walnuts, chopped dates and chopped cherries.

  8. Drop teaspoons of the mixture into cornflakes and cover gently.

  9. Place onto prepared baking trays (allow room for spreading).

  10. Baking time 15 minutes or until a light golden brown.

  11. Yield approximately 50 at 20 grams each.
