Danish Pastry Filling - Apple Filling

2,800 g Apples, diced
1,200 g Water
450 g Caster Sugar
120 g Instant Starch (Instant Gel It)

Method

  1. Mix the sugar and instant starch together.

  2. While whisking the water, add the sugar and starch slowly and a gel will form.

  3. Add the apple and fold through thoroughly.
