Date and Banana Slice

140 g | Brown Sugar | 10 tbsp |
200 g | Laucke Wallaby Flour | 1¼ cups |
1 g | Ground Nutmeg | ½ tsp |
85 g | Mashed Bananas | 6 tbsp |
38 g | Bran | ½ cup |
LEMON ICING | ||
390 g | Icing Sugar | 3 cups |
30 g | Soft Butter | 2 tbsp |
28 g | Lemon Juice | 5⅕ tsp |
15 g | Water | 3 tsp |
Method
Preheat oven to 190°C.
Combine chopped dates, water and honey in a saucepan and bring to the boil, simmer for 2 minutes until it thickens slightly. Allow to cool.
Beat butter and sugar until combined, stir in the flour and nutmeg.
Finally add the mashed banana, chopped dates and bran, mix until clear.
Spread mixture evenly on a prepared baking tray.
Bake at 190°C for 20 - 25 minutes or until firm.
After baking, allow to cool for 20 minutes, then spread the top with lemon icing.
Lemon Icing
Place butter, and icing sugar, into a mixing bowl, and mix slightly, then add the lemon juice and water to give a thick paste.
Stir over a pan of simmering water until a spreading consistency is achieved.
After coating the slice, sprinkle with a little nutmeg.
