Doughnuts

You can make superb yeast raised doughnuts using Laucke Bun Mix. Any Laucke Bread Mix will perform well, but Bun Mix already contains the sugar.

500 g Sweet Bread & Bun Mix 1 packet
4 g Yeast 1 sachet
275 g Water 1⅛ cups
14 g Butter, Oil or Margarine 2 tbsp
1 Egg 1

Method

  1. Simply add all the ingredients to the bread machine in the order prescribed by the machine’s manufacturer or into other dough mixer with hook attachment. Select either the dough or basic setting depending on your machine, and press Start. Begin mixing if using another machine.

  2. Water temperature should be about 20 Deg C.

  3. At completion of the dough cycle on your bread maker, or when the dough is smooth and shiny, in any other mixer remove the dough from the machine, and place on floured cloth for at least 10 minutes and cover.

  4. Form the dough into a nice smooth ball, and on a floured bench using a rolling pin, roll the dough out to about 7 – 10mm thick. Using a cutter the size you want, cut out the doughnuts, and then using a small cutter remove the centre. Place doughnuts onto a floured board, and cover for about 40 – 50 minutes or until about double in size.

  5. Then very carefully place into hot fat at about 185°C for about 1.5 minutes and turn for another 1.5 minutes. Remove from fat, and allow to drain, and roll in cinnamon sugar, or leave plain and ice, or split for jam and cream.

Helpful Hints

  • To make honey logs, cut the sheeted dough into rectangles and follow the former directions for rising and frying. When cool, split down one side and spread honey on the inside, and pipe fresh cream into them.
