Fruit Loaf

This delightful fruit loaf can be made with Laucke Sweet Bread & Bun Mix or one of the alternatives listed.

500 g Laucke Sweet Bread & Bun Mix 1 packet
4 g Wallaby Bakers Yeast 1 sachet
270 g Water 1⅛ cup
5 g Mixed Spice 1½ tsp
160 g Mixed Fruit, pre-soaked in water/alcohol for 45 minutes 1 cup

Method

  1. Simply add all the ingredients (with the exception of the fruit) to the bread machine in the order prescribed by the machine’s manufacturer. Select either the basic or a fruit setting depending on your machine, and press Start.

  2. Some machines will notify you with a beep when the fruit should be added. However, some don’t, in which case you will need to add the fruit 5 minutes prior to the end of the mixing cycle, or knead the fruit in to the dough by hand at the end of the kneading cycle. The machine will perform the rest of the cycle.
