Gluten Free Pizza using Easy Bakers Gluten Free Mix

500 g Laucke Easy Bakers Gluten Free Special White Bread Mix 1 packet
410 ml Water 30°C 1⅗ cups
30 ml Olive Oil 1½ tbsp

Method

  1.  Preheat oven to 215°C.

  2. Before mixing, prepare 5 - 6 pizza pans (oiled or papered).

  3. Mix all ingredients for 1 minute on low in a mixer.

  4. Scrape down sides, and mix for 2 minutes on medium.

  5. Work quickly to pour and spread, otherwise gas will be removed from batter and the texture compromised.

  6. Pour about 200 g batter onto an oiled or baking papered pizza tray, and spread evenly across tray.

  7. Proof for 20 minutes.

  8. Bake at 215°C for 8 minutes, and remove from oven. Freeze for later use, or add topping and return to oven for a further 10 minutes.
