Gluten Free Scones

500 g Laucke Easy Bakers Gluten Free Special White 1 packet
350 g Water 30°C 1⅖ cups
30 g Caster Sugar 2 tbsp
30 g Melted Butter 2 tbsp
3 g Glycerine ½ tsp
10 g Milk Powder 1¼ tbsp

Method

  1. Preheat oven to 190°C.

  2. Weigh wet ingredients and place into mixer.

  3. Weigh all dry ingredients, and place on top of wet ingredients in the bowl.

  4. Mix for 1 minute at low speed, then 2 minutes on medium speed.

  5. Pipe, or scoop and drop, 60 g of batter into a greased Patty Pan.

  6. Rest for 20 minutes. Egg wash before baking.

  7. Bake for 18 minutes at 190°C.

Helpful Hints

  • Do not allow mixed batter to sit for more than 5 minutes.
