Golden Popcorn Nuggets

250 g Caramel Lollies ¾ cup
60 g Butter ¼ cup
42 g Golden Syrup 2 tbsp
42 g Light Corn Syrup 2 tbsp
150 g Unsalted Roasted Peanuts, chopped ⅞ cup
85 g Unsalted Popcorn 10 cups

Method

  1. Combine caramels, butter and both syrups in a saucepan, stir over heat without boiling, until the mixture is smooth.

  2. Stir in the peanuts and popcorn and mix well.

  3. Drop level tablespoons of the mixture onto greased trays, and shape into balls using wet hands.

  4. Stand at room temperature until firm.

  5. Yield approximately 40.
