450 g Brown Sugar 1⅞ cups
110 g Shortening ½ cup
110 g Butter or Margarine ⅖ cup
120 g Cold Coffee ½ cup
100 g Egg 2 x 50 g
560 g Laucke Wallaby Flour 3½ cups
7 g Bicarbonate of Soda 1½ tsp
3 g Ground Nutmeg 1¼ tsp
3g Ground Cinnamon 1 tsp
2 g Salt ⅓ tsp
265 g Sultanas 1⅓ cup
155 g Chopped Nuts 1 cup

Method

  1. Preheat oven to 190°C.

  2. Mix the brown sugar, shortening, margarine, coffee and eggs in a mixing bowl.

  3. Stir in the flour, bicarbonate of soda, nutmeg, cinnamon and salt.

  4. Add the sultanas and chopped nuts last.

  5. Drop rounded teaspoonful’s about 5 cm apart onto prepared baking trays.

  6. Baking temperature 190°C. 

  7. Baking time 8 to 10 minutes, or until almost no indentation remains when touched.

  8. Yield approximately 90 at 20 grams each.
