Honey Coconut Biscuits

125 g Butter ½ cup
115 g Sugar ½ cup
50 g Egg 1 each
6 g Desiccated Coconut 2 tbsp
40 g Honey 1⅘ tbsp
240 g Laucke Wallaby Flour 1½ cup
10 g Baking Powder 2 tsp
Desiccated coconut (extra)

Method

  1. Preheat oven to 180°C.

  2. Cream butter and sugar.

  3. Add egg, beat until light and fluffy.

  4. Add the coconut and honey, beat until combined.

  5. Fold in the flour and baking powder, mix well.

  6. Roll teaspoons of the mixture into small balls, then roll in the extra coconut.

  7. Place onto prepared baking trays, at least 5 cm apart to allow room for spreading.

  8. Baking temperature 180°C.

  9. Baking time 15 minutes or until golden brown.

  10. Allow the biscuits to cool on baking trays.

  11. Yield approx 35.
