Irish Soda Bread

GROUP 1
500 g Laucke Wallaby Bakers Flour 3⅛ cups
5 g Salt ¼ tbsp
10 g Caster Sugar ¾ tbsp
10 g Bicarbonate of Soda 2 tsp
15 g Cream of Tartar 1 tbsp
GROUP 2
40 g Melted Butter 2¾ tbsp
425 g Buttermilk 1⅗ cups
25 g Whole Egg (50g) ½ ea

Method

  1.  Preheat oven to 190°C.

  2. Sieve all dry Ingredients together in group 1.

  3. Place all wet ingredients into a mixing bowl in Group 2.

  4. Add the dry ingredients to the wet ingredients in the mixing bowl.

  5. Mix thoroughly until all the dry ingredients are taken up to produce a clear dough (approximately 6 minutes) this is a soft dough to start with, and becomes better as you knead it.

  6. When the dough is smooth and clear, place on a lightly floured dusted work surface.

  7. Mould the dough into a round shape, and place on a silicone paper lined baking tray.

  8. Egg wash the top, and lightly dust with flour.

  9. With a sharp knife cut a cross + on top of the dough piece, cutting half way through the dough piece ( this ensures the centre of the Irish Soda Bread is baked out properly).

  10. Bake at 190°C / 200°C for 25 minutes (or until baked).

  11. Remove Irish Soda Bread from oven and let cool.
