Macadamia Date Slice

125 g Butter, chopped ½ cup
150 g Brown Sugar, firmly packed ⅔ cup
55 g Eggs 1 each
21 g Maple flavoured Syrup 1 tbsp
150 g Laucke Plain Flour ⅞ cups
2 g Baking Powder ½ tsp
0.5 g Ground ginger ¼ tsp
75 g Macadamias, chopped ½ cup
80 g Seedless Dates, chopped ½ cup
35 g Currants ¼ cup
10 g Flaked Coconut 5½ tsp

Method

  1. Preheat oven to 180°C.

  2. Prepare a 23 cm square slab cake pan with baking paper, base and sides.

  3. Beat the butter, sugar, eggs and maple syrup in a machine bowl until smooth.

  4. Beat in the flour, baking powder and ginger in 3 separate amounts on low speed until combined.

  5. Stir in the remaining ingredients.

  6. Spread the mixture evenly in the prepared cake pan.

  7. Baking temperature 180˚C.

  8. Baking time 20 minutes or until browned.

  9. Cool in the pan.
