Milan Biscuits

335g Unsalted butter 1⅖ cups
410g Caster Sugar 2 cups
150g Egg 3 large or 2 X-large
1 each Lemon Zest 1 each
750g Laucke Wallaby Flour 4¾ cups
150g Blanched Almond Meal 1¼ cup

Method

  1. Preheat oven to 200°C.

  2. Cream the butter and sugar together.

  3. Add the egg and lemon zest to the butter/sugar mixture and mix until clear.

  4. Finally add the flour and almond meal, and mix to a soft smooth dough.

  5. Rest for 15 minutes.

  6. Roll out to approximately 6 mm thick.

  7. Brush with egg yolk, and rib the surface by dragging a fluted cutting blade evenly over the top. Allow to dry off.

  8. Cut into desired shape and place onto prepared baking trays.

  9. Baking temperature 200°C.

  10. Baking time 12 to 15 minutes or until cookies are lightly browned.
