45 g Butter 3 tbsp
115 g Sugar 9 tbsp
3 g Mixed Spice ½ tsp
3 g Bi-Carb ½ tsp
115 g Water (HOT) ½ cup
GROUP 2 (G2)
55 g Egg 1 each
GROUP 3 (G3)
190 g Wallaby Baker's Flour 1⅕ cups
5 g Baking Powder 1 tsp
3 g Salt ¾ tsp
220 g Chopped Dates 1⅖ cups
55 g Chopped Walnuts ⅖ cups
25 g Raisins 2¾ tbsp

Method

  1. Preheat oven to 190°C.

  2. Place Group 1 in a large bowl (melt butter before adding).

  3. Combine ingredients to dissolve sugar.

  4. Add Group 2 and mix until clear.

  5. Using a wooden spoon mix in Group 3 until smooth.

  6. Place into a cake tin.

  7. Bake at 190°C (Conventional Oven) for 50-55 minutes.
