Pancakes - using Laucke Wallaby Flour

160 g | Laucke Wallaby Bakers Flour | 1 cup |
260 g | Milk | 1 cup |
7 g | Baking Powder (optional) | 1½ tsp |
3 each | Eggs | 3 each |
15 g | Sugar (optional) | 3½ tsp |
2 g | Vanilla Essence (optional) | ½ tsp |
Method
Sift flour and baking powder.
Place all dry ingredients and eggs and vanilla in a bowl.
Add about half the milk and stir until the batter is lump free.
Slowly beat in remaining milk until you achieve desired batter consistency.
Lightly coat a frying pan with oil on a medium heat.
Make one pancake at a time by pouring batter onto a pan and tilting to cover the whole surface of the pan evenly.
Cook until nicely browned, turning once.
Serve hot with your favourite choice of toppings.
