Pancakes - using Laucke Wallaby Flour

160 g Laucke Wallaby Bakers Flour 1 cup
260 g Milk 1 cup
7 g Baking Powder (optional) 1½ tsp
3 each Eggs 3 each
15 g Sugar (optional) 3½ tsp
2 g Vanilla Essence (optional) ½ tsp

Method

  1. Sift flour and baking powder.

  2. Place all dry ingredients and eggs and vanilla in a bowl.

  3. Add about half the milk and stir until the batter is lump free.

  4. Slowly beat in remaining milk until you achieve desired batter consistency.

  5. Lightly coat a frying pan with oil on a medium heat.

  6. Make one pancake at a time by pouring batter onto a pan and tilting to cover the whole surface of the pan evenly.

  7. Cook until nicely browned, turning once.

  8. Serve hot with your favourite choice of toppings.
