Peanut Butter Crinkles

125 g Butter ½ cup
3 g Vanilla Essence ¼ tbsp
1 g Grated lemon Zest ½ tsp
75 g Sugar 6 tbsp
60 g Brown Sugar ¼ cup
75 g Peanut Butter ¼ cup
200 g Laucke Wallaby Flour 1½ cup
7 g Bicarbonate of Soda ½ tbsp
Pinch Salt

Method

  1. Preheat oven to 190°C.

  2. Cream the butter, sugar, vanilla, lemon zest and peanut butter until smooth.

  3. Stir in the flour, soda and salt, making a stiff dough.

  4. Roll heaped teaspoonfuls into small balls with floured hands.

  5. Place onto prepared baking trays.

  6. Press biscuits down lightly with a fork, first crosswise and then lengthwise, for a crinkled effect.

  7. Baking temperature 190°C.

  8. Baking time 15 minutes or until lightly browned.

  9. Cool biscuits on baking trays.

  10. Yield approximately 25.
