Peanut Cookies

125 g Butter ½ cup
110 g Brown Sugar ½ cup
50 g Egg 1 each
160 g Laucke Wallaby Flour 1 cup
6 g Baking Powder 1¼ tsp
3 g Bicarbonate of Soda ⅔ tsp
50 g Rolled Oats ½ cup
45 g Coconut ½ cup
75 g Salted Peanuts ½ cup
17 g Cornflakes (finely crushed) ½ cup

Method

  1.  Preheat oven to 190°C.

  2. Cream the butter and sugar until light and fluffy.

  3. Add the egg and beat well.

  4. Fold in the flour, baking powder and bicarbonate of soda.

  5. Finally add the rolled oats, coconut, peanuts and cornflakes, mix well.

  6. Place teaspoons of the mixture onto prepared baking trays, allowing room for spreading.

  7. Sprinkle extra crushed cornflakes over the top of each cookie.

  8. Baking temperature 190°C.

  9. Baking time 10 to 12 minutes or until golden brown.

  10. Yield approx 35.
