Pumpkin Spice Bars

450 g Caster Sugar 2¼ cup
210 g Vegetable Oil ⅞ cup
480 g Cooked and cooled Pumpkin 1⅞ cups
320 g Laucke Wallaby Flour 2 cups
10 g Baking Powder 2 tsp
6 g Ground Cinnamon 2¼ tsp
7 g Bicarbonate of Soda 1½ tsp
3 g Salt ½ tsp
1 g Ground Ginger ½ tsp
1 pinch Ground Cloves 1 pinch
90 g Sultanas ⅝ cup
CHEESE FROSTING
90 g Cream Cheese (softened) 6 tbsp
50 g Plus 2 tablespoons Butter or Margarine, softened 3½ tbsp + 2 tbsp
5 g Vanilla Essence 1 tsp
310 g Icing Sugar 2½ cups

Method

  1. Preheat oven to 180°C.

  2. Beat the eggs, sugar, vegetable oil and pumpkin.

  3. Stir in the flour, baking powder, cinnamon, bicarbonate of soda, salt, ginger and cloves.

  4. Pour batter into prepared baking tray.

  5. Baking temperature 180°C.

  6. Baking time 25 to 30 minutes or until light brown.

  7. Cool and ice with cream cheese frosting.

  8. Cut into bars 5 cm x 3.5 cm.

  9. Yield 24 bars.

  10. Cheese Frosting

  11. Mix cream cheese, butter and vanilla. Gradually beat in the icing sugar until smooth and of a spreading consistency.
