Australia Day Savoury Damper - Using Wallaby Bakers Flour

DAMPER RECIPE
500 g Laucke Wallaby Bakers Flour 3-1/4 cups
20 g Baking Powder 2-1/2 tsp
30 g Milk 2 tbsp
5 g Salt 1/2 tsp
25 g Oil or Butter 2 tbsp
300 g Water 1-1/5 cup
SAVOURY FILLING RECIPE
130 g Ricotta Cheese 1/2 cup
185 g Grated Cheddar Cheese 1-1/2 cups
200 g Minced lean Lamb 1-1/4 cup
50 g Fresh sliced Mushrooms 1-1/2 cups
2 g Fresh finely chopped Rosemary 1/2 tsp
2 g Fresh Finely chopped Mint 1/2 tsp
50 g Whole Egg 1 Egg
5 g Salt 1 tsp
2.5 g Ground Black pepper 1 tsp
EGG WASH: 1 egg and equal quantity of milk mixed together

Method

  1. Preheat oven to 180°C.

  2. Sieve the flour and baking powder.

  3. Place all Damper ingredients into mixing bowl leaving the filling ingredients aside.

  4. Mix by hand or machine until a smooth dough is formed.

  5. Roll the dough out into a circle about 1 cm thick and place on baking paper on baking tray. Some flour may be required for dusting.

  6. For the filling add all the ingredients to a bowl and mix until well combined.

  7. Place the filling in a circle around the centre of the dough leaving about 4-5 cm uncovered in the centre (placing a cutter or round object in the centre may make this easier) and leave about 4-5 cm of the outside of the dough piece uncovered.

  8. Lightly dampen the outside rim of the dough piece and lift from the edges and fold into the centre right around the dough into the centre to seal it.

  9. Brush the surface of the Damper with the egg wash and using a sharp blade score the top with shallow cuts in any preferred design. Using a skewer or similar penetrate the top of the Damper several times all the way around.

  10. Then place into oven, bake – 180°C for at least 30 minutes, or longer if desired.
