Scones - using Laucke Super Soft Bread Mix

600 g Laucke Super Soft Bread Mix 3¾ cups
30 g Baking Powder 2 tbsp
200 ml Cream ⅘ cup
400 ml Milk 1⅗ cups
Melted Butter

Method

  1. Preheat oven to Conventional 220°C / Fan Forced 200°C / Gas Mark 7.

  2. Combine dry ingredients.

  3. Add all the cream, and sufficient milk so that a light knead provides a soft dough.

  4. Turn on to a floured board and allow to rest for 5 minutes.

  5. Roll out to about 30 mm thickness and cut.

  6. Brush tops with melted butter.

  7. Bake in a hot oven (Conventional 220°C / Fan Forced 200°C / Gas Mark 7) for 8 to 10 minutes or until golden.
