Sultana Fruit Cake - CWA Scone Mix

| 250 g | Laucke CWA Scone Mix | ½ packet |
| 150 g | Eggs | 3 |
| 100 g | Sugar | ½ cup |
| 100 g | Butter or Margarine (softened) | ⅖ cup |
| 5 ml | Vanilla Essence | 1 tsp |
| 80 ml | Milk or Water | 2 tbsp |
| 270 g | Sultanas | 1¾ cups |
| 60 g | Mixed Peel (Optional) | ¾ cup |
Method
Turn oven on (fan forced 150°C) (non fan forced 160°C).
Prepare a 210 mm – 8 ¼ “ spring form pan or similar by lining the bottom with baking paper and greasing the sides.
Add Scone Mix, Eggs, Sugar, Butter / Margarine and Vanilla Essence to a mixing bowl.
Using a spatula combine by hand to form a smooth paste / batter.
Using hand held beater gradually add the milk or water to form a smooth soft batter.
Evenly mix in the dried fruit/s using the spatula.
Scrape in to the baking pan and level out using your hand or scraper.
Place in the oven for about 60 minutes or until a skewer comes out clean.
Allow to cool for about 20 minutes before removing from the pan and then leave to completely cool before cutting.
