Sultana Muesli Drops

275 g Margarine 1 cup
150 g Granulated Sugar ¾ cup
300 g Sultanas 1¾ cups
550 g Unsweetened Muesli 6⅓ cup
100 g Laucke Wallaby Flour ⅔ cup
150 g Coconut 1½ cups
300 g Eggs 6 x 50 g

Method

  1. Preheat oven to 180°C.

  2. Place margarine into a saucepan, and stir over medium heat until it has melted.

  3. Remove from heat, and stir in the sugar.

  4. Immediately add the sultanas, muesli, flour, and coconut.

  5. Ensure mixture is cool, and add the egg, and mix well.

  6. Lightly dampen hands, and shape the dough into golf ball size balls.

  7. Place onto prepared baking trays, and flatten lightly with the back of a spoon.

  8. Baking temperature 180°C.

  9. Baking time 12 to 15 minutes, or until cookies are golden brown, and firm to the touch.

  10. Yield approximately 40 at 45 grams each.
