Wholemeal Flour
This 100% wholemeal is produced from a special base flour to which the
appropriate amounts of specially prepared bran, germ, semolina and other
mill streams have been added back and mixed to reconstitute a whole
meal. This method provides a meal that performs in a superior manner to
meals that have been obtained by the simple reduction of whole wheat to
smaller particles.
90/10 Wholemeal
This “90%” wholemeal is produced from a
special base flour to which the appropriate amounts of specially
prepared bran, germ, semolina and other mill streams have been added
back and mixed to reconstitute a meal that will produce bread of about
2.0% crude fibre. This meal can be expected to perform in a superior
manner to 100% meals, yet still conforms to the minimum fibre levels for
the manufacture of wholemeal bread.
Organic Wholemeal Flour
This Organic Wholemeal flour has been
milled to specification from selected Organically grown high protein
Bread wheats that have been grown under N.A.S.A.A. Certification; and
is suitable for the production of a wide range of bold and attractive
Breads.
Triticale Wholemeal Flour
This 100% wholemeal flour is milled from
Triticale grain which is derived from Durum wheat and Cereal Rye. The
first natural cross was observed about 100 years ago. This product will
produce superb chemically aerated products such as scones and damper in
place of normal flour and provide a beautiful sweet nutty flavour. It
will not make good bread on its own, but can be used at up to about 30%
of the flour weight to confer a different flavour and provide
nutritional advantages over normal wheat based products. The branny
particles also have a unique reddish brown colour.
Sof Wheat
This product is wholegrain wheat that has
been steamed under pressure and then released to normal atmospheric
pressure which causes it puff up and become very soft. It is ideal for
incorporation into bread doughs where the benefits of whole grain can be
provided without the risk of dental damage.
Kibbled Wheat
Cleaned and suitably conditioned Whole
Wheat grains are ground to specification to give a consistently broken
grain that is suitable for admixture to a wide variety of doughs or
dough pieces. Kibbled Wheat is best presoftened by soaking prior to
use.
Quokka Bran
Special attention is paid to the
selection, preparation, extraction and presentation of these outer
layers of the wheat grain, to ensure it meets high standards of eating
quality, taste and appearance. Produced to a specification giving
improved dough functionality.
Wheat Bran (High
Quality Cereal Bran)
Special attention is paid to the preparation, extraction and presentation
of this bran to ensure that it fully meets the high standards required
when these outer layers of the wheat grain are used in the preparation
of food for human consumption.
Rye Wholemeal
This 100% meal has been carefully prepared to produce the best results
when genuine whole rye products are desired.
Organic Rye Wholemeal Flour
A N.A.S.A.A. certified flour made for
those people that produce organic rye breads or breads containing rye. A
manufacturer will require his own certification to produce “Organic”
labelled Products with this flour, and may need a copy of the Laucke
certificate which is available upon request. This product can be used in
most white bread formulae at up to 30% without problems.
Those people experienced in authentic rye production will enjoy the
results this flour can produce.
Sof Rye
This product is wholegrain Rye that has

Multigrain Meal
The Multigrain Meal is a balanced blend of flour and several different
soft grains presented in various particle sizes. It is designed to be a
cost efficient way to produce Multigrain breads using large or small
scale production. This product can be used as is, but requires the
addition of Salt and Improver.
Multigrain Concentrate
Multigrain concentrate is a blend of
various soft grains that is designed to be added to a straight dough to
produce a variety of Multigrain breads. Can be used up to 30% of total
flour weight.
It may also be used as a dough piece coating prior to baking to enhance
the visual appeal of the baked loaf.
